This soup takes about 2 hours to cook but prepping is easy! All you have to do is add an onion, sweet potatoes and some olive oil. Many coconut curries add sugar, you won't find that in this mix. It has a mild to medium spice (some heat) level, if you find it's too spicy add a little more coconut milk or serve over rice.
Can be made on stove top, in slow cooker or in an instant pot.
Ingredients: chickpeas, bell peppers, dehydrated tomato flakes, spinach, garlic, curry powder, black pepper, ground ginger.
